I used to think that as well. Stock android is actually TOO vanilla for my liking.This is the reason why I'll be waiting to see what else becomes available over the next month or so. The display is the only thing that grabs my interest.
If Samsung did a vanilla android version I'd definitely go for it
I've has similar experiences as you've described, and often upgrade once a year to the latest phone. However, my S7 seems to be working great with the Nougat OS upgrade. By battery life is also excellent (battery was replaced 3 months ago when I had a cracked screen replaced). My screen looks great, and I have experienced any slow downs or lagging with daily use. Thus, I really can't justify upgrading to the S8 or any other new phone at this time.Samsung phones always start out great when you first own it. But after updating the OS, it seems to slow down and lag. Or maybe it's just me? Also battery stops holding a charge after a good 8-12 months, not sure if it's the battery or software that's doing that. My only concern is owning it more than a year, will performance and everything be the same? Reason why I keep switching phones is because of those issues. For example, who remembers the S4 being a very fast phone? Try using that phone now with the updates, it's unusable.

Back about 5 years ago, it was fun having custom ROMs with stock android. However, those also had functionality that was "cherry picked" added in as well.
Stock android can't compete with Samsung's version nowadays IMO. They add so much more into the OS that you would need to download separate apps for to get the same functionality.
The long term issue is like with any sealed battery. Battery life. The more sustained use in hot ambient temps along with gaming, etc means about 10 to 15 percent less battery life after a year. Samsung's touting 5% is probably under ideal conditions.

Yeah I thought it was sort of a waste at first but now I'm looking at it like I'm getting used to the new OS ahead of receiving the new phone.Thanks for the heads-up. I did not realize that 7.0 was available for the S6E+. Downloading now (though it is kind of a moot point since my S8+ will be here NLT Thursday.....
QFT. If your battery has degraded and it's giving you heartburn, no need for a new phone. Unless you just want to upgrade.The batteries are not hard to replace. Get a heat gun and a business card
