Do I really need to backup everything to root my phone and if so how do I do that ?

Assuming that you are currently running STOCK FROYO/GINGERBREAD (or most recent ota: FC09), you may flash a custom recovery using ODIN (clockworkMod, for example) + also flash the SU file (this will give you ROOT) in order for your recovery to stick from consequent power-off + power-on of your device.
Your custom recovery will allow you to create a Nandroid full-backup that is stored in your microSD Card which you may use in the event that you have to restore your stock set-up. You may also simply ODIN back to a clean factory STOCK FROYO, but that's not what you're asking.
App Backup & Reinstall,'........ 'SMS Backup & Restore' as well as 'Call Logs Backup & Restore' are three apps available from the PlayStore that will help w/ your data backup prior to using ODIN for root/custom recovery.
Check out the sticky 'how-to-root' or else how to recover from a bricked device threads in this forum for greater detail. Ultimately, you have to decide whether your personal data is worthy of a backup, especially since you can always flash any of the stock ROMs from scratch + end up w/ working versions of any of these as if 'right out of the box' when you first booted up your Epic.
@The Harrington,
regarding GoogleVoice, was looking at the following thread for clues (I remember seeing the option to unselect the 'text/sms/email' notification/connection that you're getting)................ link is here:
http://forums.androidcentral.com/sp...oogle-voice-sprint-have-separate-numbers.html
+ of course this thread specifically goes into Google Voice at some length:

However, you may be refering to the Phantom Voicemail..........(haven't seen one of those for awhile!) for which we have a fix, is that it? Oh, another thing, I just remembered:......when you first set up your Google account from a fresh cyanogenMod install, as you are establishing your gmail client etc, Google queries whether you would like your text/email/GV all combined? GV has these options on the settings page online, but you have already explored that option.
Looks to me, if your clean install was very very recent, you'd be better served re-flashing CM9 RC1. Let us know if you find an easy fix, though.
