ROM theme questions

I have a question for all the rom theme builders, I am running into a few image issues, I cant figure out how to change a few aspects of a theme.

I have got a large amount of the files ported over but I decided to make a combination build from 928Glass and Gingerbread theme I have been working with.... I have one issue with images, I can not figure out where the default font color is controlled for the main menu bar. Is this controlled by images or a xml file?

Also I need make some banners white that is black on a black pull down.... If you can help here will be helpful.

Also I noticed I got a couple of red images that I want to be blue...
