Rooted GS3 with ICS, can't figure out how to update to Jelly Bean.

I have a GS3, already rooted, working perfectly (except every time I reboot it, it cycles through some optimization process supposedly updating programs, I can't figure out why. Supposedly related to davlik cache??)

It is still on ICS because I can't use the VZW OTA update on a rooted phone, but I can't seem to figure out how to update it to JB otherwise.

Any help / advice?
 
Uhh... wipe, format, then flash whichever ROM you want to try in custom recovery? If you're going for a newer ROM, be sure you have the latest version of your chosen recovery installed first.
 
Also sounds like you might have a custom rom already on there.

Then I lose all my custom settings, apps, etc, and basically have to setup my phone from scratch again, correct?

I'd suggest Mobile ODIN: http://market.android.com/details?id=eu.chainfire.mobileodin.pro - once you find the ROM that you want to load you're ready to roll.
I haven't seen a release of the new 4.1.2, but if you want stock TouchWiz then you should just wait until one gets posted and load it.
