Depends if you want AOSP-based ROMs or TouchWiz-based ROMs. You can find ROMs for your android phone in sites such as xda-developers.com
Find a ROM you want to download, place it into your phone, download signed gApps zip to your handset, (assuming you already have a custom recovery such as TWRP or CWM installed)wipe data/factory reset, flash ROM then gApps, and reboot.
Technically, you should know this right now, as this knowledge is basically a prerequisite before rooting your phone so you already know how to flash custom ROMs. Also, make a Nandroid backup of your stock ROM so you can revert back in case something goes wrong. Flashing via stock recovery works as well, though you're likely to mess something up more so than in custom recoveries.
