Mine will change often. I usually end up back on the Pixalized theme with pictures of my dogs for lock and home screens. I'm still organizing, I like all of my apps in folders. I like minimal designs overall but do have two other home screens with apps and widgets handy. I like the option to show just the red dot vs numbers when an app has notifications.

Also, I'm trying to find a good mail app for personal use if you have a favorite. Outlook is the first so far that uses the same trash, sent, and spam folders rather than duplicating.
