Should I trade my G3 for a Moto X (2014)?

While the Moto X may be missing some of the extras that the G3 has due to the manufacturer's skin, I much prefer to stay as close to stock Android as possible. The Moto X just absolutely flies and I haven't seen anything make it stutter. I would switch in a heartbeat if I were having the performance issues that you noted in your post.

Im in the same boat. I actually got to try the G3 for a bit over a week and upgraded it from 4.4 to 5.1 and while an overall improvement I was still getting these random hangs. I really did not think I would like a phone that big but I found that I didn't mind it. Battery life was OK but that large high res screen takes a toll.
