Update Failed

Hello!
I am new to this forum; however, I have been using this site for quite some time to get some help with my Samsung Fascinate.
My phone recently has been acting up... i.e., LOTS of lag, deleted all my SMS messages, etc
I figured this might be because I have skipped a update in the past, and was also unable to update my phone with an OTA update that came to me this morning.
I'm guessing this is because I rooted my phone/deleted the bloatware that comes with it...
Now my inquiry on this phone is this: How do I unroot my phone without doing a factory restore? I have about 9 months of data on this phone and would hate to lose anything!
I found rooting to be quite simple because of the easy step-by-step directions, but when trying to find things for unrooting without factory restoring... all this talk of odin and flashing and what not has got my mind confused as hell!
Please help!

Edit: Mind you, I'm still on 2.1! I JUST found out not 5 minutes ago that 2.2. was released for the Fascinate -__-

Ok. First off, do you have your stuff backed up? If not, do that now. As for OTAs, you have to completely stock for those to work and the only way to do that is via Factory Restore through stock Recovery or an ODIN stock file. Either one will wipe everything off your phone, but if you have your apps and other data backed up, that's a non issue.
