Reality check, or best guesses, please.

I am seriously looking at the Xoom, either WiFi or VZW out of contract (ye$, I know...). I have been burned twice running (Dare, Fascinate) by VZW pulling the plug on updates. That got me thinking...

The VZW Xoom is only going to be updated by VZW-approved updates (when/if) or by rooting. The WiFi-only version will be updated by Moto itself, and will probably get updates sooner and longer than the VZW version...which makes the WiFi-only version more attractive over the medium term, I think (there is no such thing as a long term smartphone or tab at this point, I think).

Am I likely to be guessing correctly???

An additional consideration is the fact that once the Xoom is 4G updated, if you want to use 4G, the minimum data plan from Verizon will be 50.00 per month.

Yeah, I don't think even VZW knows what their 4G plans are going to look for three months from now.

Wifi does it for me as I always have my phone with me and it basically serves as my hotspot device. He'll I rarely use it for calls anymore, it's email and texts for the most part. Rather kill off it battery and not be locked to any specific carrier for my tablet. One less contract to deal with is always a good thing.
