I would try couple things see how it works, register wet thumb and dry thumb and 2 different angles see how it turns out for you.

Yeah....it didn't install like I'm used to. After it downloaded I hit install and it immediately rebooted, then went through an install screen, then app optimization. A bit more downtime than I'm used to

Note the release date shown in your screenshot...that was the release notes for the initial update we got just as the phone was released in early March. My screenshot above was the one dated for today.

That would explain why it was further down the list when I scrolled.

Still nothing. I'm on Verizon but my phone is the unlocked model I bought directly from Samsung. Maybe that's why I'm not getting the update as fast?

That's precisely why. We who bought the unlocked version unfortunately usually get these updates after all of the big carriers approve them - so far I've seen Sprint, T-Mobile and Verizon push this out, so fingers crossed AT&T will soon so we'll be eligible.
