Want to customise 5.1.1 on my samsung galaxy S5 mini or revert to previous software

last night I installed android 5.1.1 on my Samsung Galaxy S5 mini. Truly hate it, having used it today..... Hate the white backgrounds on all the apps, hate the notifications, hate the fact that it doesn't offer me a "just this once" option when opening stuff from other apps....

Can I turn this off, change colours reset my default apps?

If not how do I find out what software I was on previously and reinstall that?

Welcome to Android Central! You might be able to change the color scheme if you have an option to change Themes.

Otherwise, you'd have to use Odin to manually reinstall the previous firmware: http://forums.androidcentral.com/am...w-flash-stock-rom-via-odin-new-interface.html
