What am I doing wrong? Or is this camera just THAT bad?

Unfortunately it's just how Samsungs are. All the galaxies I've had did it. It's how they work in average to low light.
Most noticeable on hair /fur, skin and things like grain in wood. Just gets blended together.
Main reason I stuck with my Pixel 3. Plus I take photos in these conditions a bit.
I tried the Google camera on the S9+ when we had it but for some reason it had horrible purple pinkish banding and artifacts.
You are right, this isn't old news, Samsung has always lacked in the camera department. I am no photo God, so I don't notice defects in pictures, in fact I haven't even played with the camera yet. I know taking pictures on the note 9 was slow.

Im not sure about Samsung always lacking in the camera dept. Wasn't there a time where Sammy was the standard to which all Android devices were help in regards to photos?
Think their "issues" are just a recent thing. I had an S7 that, I feel, took better indoor pics than my S10+.
 
All these shots I was trying to focus on my dog, which was really pretty still in all these shots, and in every one she seems out of focus and blurry. This is that same issue I had with the Note 9 which eventually [led] me to returning it[.]
Have you tried saving in RAW format in Pro mode? How does that look?
 
If you want a camera, that just so happens to do more than take pictures, keep the Pixel. The Galaxy S10+ is a better device, overall, in my opinion. I'm not a amateur nor professional photographer, so the camera was never a factor.
 
I don't think mine look too bad. As long as they don't look terrible, I don't care really!

I think the camera has a lot of potential. I can almost always get a macro shot or close up right. Some other "point and shoot" stuff is hit and miss. I don't think the camera is bad, I think the software needs a tweak. I'm assuming things will get better in an update. It can take good photos. But I don’t like the smoothing the cameras produce in selfies. That beauty filter is just awful.

I don't doubt you but prior to owning a Samsung I always heard great things about the camera. Results from side by side comparison reviews have been pretty good. The scenarios they use though probably aren't as demanding.

Makes me think I need to keep my Pixel as backup for important shots. One good thing I like is that there are manual settings which Pixel lacks.

I don't disagree with the statement of the Galaxy S10+ is a better overall device. Which is why I am trying hard to get the camera/pic quality suitable for my needs. I'd like to keep it but also want/need a device where I can simply point and shoot with confidence I can capture good quality pics of my kids and pets ... Those pictures will be around a lot longer than my S10+, after all
 
its definitely the camera...i have a little guy and every picture i took of him with the pixel 3 was crisp...everything with the s10e is a bit blurry...its disappointing...i even tried a OP 6t, and the 10e's camera is similar to the 6t, MILES behind the Pixel 3

See, I don't think Samsung devices take trash pics, but that probably has to do with my lack of knowledge. I've taken some incredible pics (according to others too) with my Samsungs. Again, I defer to your expertise on that.

I want better audio - my BlackBerry Bold 9900 and HTC M7 produced better quality sound. I'm still waiting for it.

Yeah, I think the Pixel line just spoiled me that much LOL. Hate to return a device based on camera alone, but let's face it, I think we all rely on our phones as our main shooter as it's always with us. As many categories I feel the S10+ trumps the Pixel 3 sadly it appears I've learned, for me personally, a good camera trumps all.

If you want better audio from buds or headphones purchase the USB C to 3.5 audio dongle made for Razer phones. The HTC dongle isn't bad either.

Not trying to speak on someone else's behalf, but wanted to chime in and say that my experience it has been with movement of any kind. Even movement of a flower being blown ever so slightly by the wind causes the camera to focus on the background and/or foreground (i.e. - the object that IS stationary). Whereas the Pixel results usually have the moving subject as the primary focus 99% of the time for me.
 
Here's a picture with S10 cam vs Gcam port on my s10. The lighting wasn't good but if you zoom you can see hairs better with Gcam photo, more smoothing on S10 cam. I take a lot of photos of dogs and outside in good light there is not a huge difference but indoors Gcam does seem to take "less" smoothed photos. Video camera on the other hand I never use Gcam port, S10 much better!

Cute dog! Yeah the difference is real here and I agree with you on that point.
