What am I doing wrong? Or is this camera just THAT bad?

Understood. But again. I only adjusted some basic color and contrast option which are saved and then it is just point and shoot. These two photos are just point and shoot in Pro-Mode with the pre-set contrast, color tone and highlights set. Agreed, things like you mention work for me, yourself and others and I'm greatful the Samsung has manual settings unlike the Pixel. Unfortunately, many don't want to venture outside of their comfort zone and would rather just hit a button. This conversation is good and hopefully it helps others improve their results.
 
The phone does very well, just has quirks unique to the camera as all phones do. Just have to learn your equipment and find work arounds that produce results you're happy with. This phone just requires a bit of tinkering more often in low light than say Pixel products but then they have limitations as well. Gcam sideloaded has fixed my only gripe and is a tool for a limited situation for me. Get what works and enjoy, life is to short to not be happy. lol

So Pro photog here chiming in. Cameras need light to take photos, that literally all a photo is a camera capturing light. To capture any photo there are 3 things that come into play: ISO (that amount of grain), Shutter Speed (keeps away the blur), and Aperture (how blurry the background gets). The cameras of old got super grainy photos in low light, that was a big complaint because low light was basically unusable and there wasn't a fix. There are only two apertures on this phone so that's set. So that just leaves shutter speed. To get a non grainy photo it has to lower, which can result in blur with a moving subject or shaky hands. However this is a better option because if you can get a crisp on its great. If it were higher ISO it would be crisp but so grainy it's pointless. This transfers to all cameras even pro ones. The only 4th component you can add is flash, this can use the slow shutter speed but freeze the subject. And honestly the flash on this has improved a lot. Now the Pixel does something in software I get that, but I've used it and can get blurry pics too if they are moving. As a pro photog in all the situations y'all posted I'd grab a flash even with my pro camera. The shutter speed would just be too low. Hope that explains a little. It's not a bad camera it's doing things right just sometimes makes it a little tricky but low light always is.
This is what I've been telling people all the time in threads like this. My only gripe with the camera is Samsung's processing especially when it comes to people's faces. With scene optimizer and beauty options turned off it still smooths out people's faces too much that it makes people look like they're wearing makeup. Lol. Drives me crazy.

Yes that is true but again it's all the past griping on grain they went overboard. This phone does it tremendously less than the s9 so I assume they will just keep improving. ISO is the hardest thing to make better on a camera. It took forever on our pro cameras to allow higher with little noise.

I honestly think it's worse on the S10 compared to my Note 9. Even in day light when high ISO is not needed the smoothing of the skin is pretty bad compared to my N9.

Are you sure you have beauty mode off? Mines showing solid even super zoomed in if it's good light.

I'm positive it's off. Yeah your pic is definitely processed better than what I've seen. I'm going to do some tests again.

I kept my S9 for a bit to compare cameras like I usually do and really thought this was a major improvement. I really haven't seen much smoothing except in low light.
