Welcome to the crew. I'm a little late in replying, but there's lots you can do with a Z Ultra. I actually came from a Galaxy Note 2 and Nexus 7. I could do a lot on the Note 2, but there were some things that didn't seem "just right" without a larger screen. So, the two devices kind of mirrored each other. That mostly worked, but there were some apps that didn't handle working on multiple devices well. And I really wanted to get down to two devices.

Having said that, you can pretty much do anything you've done on phone or tablet, except you won't need to switch devices. I think I had one app argue that it was incompatible with my Ultra and it was so important, I don't recall which one. For several others that didn't like my Nexus 7, they see the Ultra as a phone and install just like they would on a "normal" sized device. Have fun.
