Which of these apps , if any... should be updated?

I didn't know if any of the google apps worked off of one another if that makes any sense?
 
Don't quite understand your question. I maybe wrong but most
of those shown apps No need any action, from your part to
be Updated. Google update these apps in real time in
other words, when it Need to and it does All in 1

I mean I don't use these apps except chrome. I have auto update turned off so nothing Will update. I was not sure if I disabled some it would have some effect on say chrome or ok google feature etc. Does that make sense?

You can disable them if you want. They won't effect chrome or OK Google.

Is chrome worth the large file update?
I haven't used chrome in several months. It's a pretty big resource hog. Having said that, when I did use it, I always kept it updated. The updates are usually about bug fixes, security updates or trying to provide speed enhancements.

I wouldn't worry about updating those, but I do have a recommendation if you use Chrome for Facebook and having issues uploading pictures, or any other oddball error.

Disable Chrome first. Then find System Webview in the application manager and enable it (it's disabled by default and can't be enabled on Nougat while Chrome is enabled). Then go to the Play store and update System Webview. Once done, you can enable Chrome again. This will automatically disable System Webview, but should fix errors like I mentioned above.

I always update my apps. No reason not to really -- most are bug fixes and other things.
