Which ROM should I choose?

Hi!

Since It'd still be possible to restore a bricked device for warranty, I've decided to look into ROMs.

I'm not using the default launcher, so I'm not sure if "STOCK" is what I want. But anyway, I don't want overclock (shorten the tablet lifespan) nor underclock (lower the performance). As I understand, some custom ROMs contain bug fixes in regards to Google's Android, as well as customization options. I don't want any pre-installed software - I can choose my own programs (although it's not a dealbreaker if the ROMs awesome).

So what are my choices and why? I've been reading about different ROMs, yet I've no idea about which one I should choose...

P.S. I've Nexus 7 Wifi 2012.

I chose Paranoid Android with Franco Kernel as the current stock Rom and Kernel weren't doing it for me. The Halo feature is a good multi-tasker. I use it quite a lot but it takes time to learn. I don't know if it's just me but I feel like my Nexus 7 seems sharper in detail. I also like their tablet UI where the quick settings and notifications are on the bottom along with the Navigation buttons, so I have more screen. The color of the Navigation bar also changes depending on the app I'm in (blue for facebook, red for youtube, etc) which is pretty cool. OR you can eliminate the navigation button and use pie control for full screen but I'm not a fan of pie Control as i rather have the buttons right there and the case around my Nexus messes the trigger for pie control. Or you can change it to other UI's to your liking like Phone UI which well looks like a phone layout. Its also android 4.3 so it still a nexus device.
As for preinstalled software, its basically the most basic ones... Gmail, play store, gallery, etc.. However, it does have the STOCK feel but with android you can easily make it your own

Now for which one you should choose? Its up to you to what goes with your personality and taste ... Featured: Top 10 Best Custom Android ROMs - Fall 2013 Edition | Androidheadlines.com
What I do is i flash a new rom per week and find which one i like ..( flashed slim bean, then paranoid android) then got lazy lol

I am a huge fan of the Slim line of ROMs and they work real well over-all. I went to Slim after using PA for awhile and I am just not a huge fan of insane amounts of customization. For me Slim had all the right optimizations I wanted.

[ROM][4.3 JLS36G]SlimBean -grouper- [build.2] [10-28-13] - xda-developers -- 4.3
[ROM] [4.4] SlimKat (grouper) [Alpha Builds] - xda-developers -- 4.4

I won't be to worried about OC'ing being an issue to longevity. Your battery will give out way before the OC will have any noticeable effect. Not to say OC to the limit is safe but 10%-20% can cause huge benefits.
