Why I cannot fully use non-samsung headphones on my S6?

Hi, does anyone know why non-S6 original headphones are not fully usable on my S6? I can only use the "central" button to pause and to skip songs, the volume controls don't work. It happens with several headphones (I have Bose, Jabra and Yurbuds)

Headphones are headphones, switches can be wired any way the manufacturer likes. We're not yet at the "universal cellphone headset" stage.
