Wiping out the phone but google data still there ???

Hi there,

I recently used a Samsung Galaxy S5 and configured my google account on it .... then wipe out the device using th volume up, power and home button and gave it to a friend ....

but he is now telling me when switching on the device and in the configuration process, the phone is asking for th "owner's" adress ... , which seem to be my gmail account, without letting him enter his own gmail account ?!?

How can that be ?

That is a security feature. You will need to enter your account information to remove the account from the phone.
