Can you see when an S7 has been accessed

Is there any way to see if someone is using your phone? I have a suspicion my girlfriend is going through my phone while I'm asleep during the day after working night shift. Is there any easy way to see access times, such as each type my swipe password is entered?

No. You can see the app history but that's it

There are security apps that, if you don't want to completely stop her but just know if she's looking, will take a photo when the device is unlocked. There may also be one that records the times when you're phone odd unlocked.
