How come when I use my phone all by myself it works great. I use S voice all the time at home or any time alone it performs right, BUT try and do it in front of someone and it turns into the dog that won't listen when company is over! Then I am standing there looking stupid talking to a phone that just stares blankly back at me

Don't feel bad. I've had S-Voice work ONCE while in my car (a place where it'd actually be useful), yet it works whenever I'm sitting on my couch not trying to toggle bluetooth or text my wife.

I blame background noise.

My S Voice kicked in when I dId not want It to so I said cancel. It replied "searching the internet for chathulu"
