I just installed the update of 5.1 lollipop version on my Moto G XT 1033, not at all satisfied, can I uninstall this update and restore the previous kitkat 4.4 version without rooting ?

Short answer - no.

But any new OS uses excessive battery and data in the first week. You can try un syncing some account settings.

If you don't like the look of it, I may be joining you when I get it, but it's early days, they are working on a dark theme afaik, and I think become more to your liking, or more adaptable, in a short while.

I don't know too much about it, but check the blog articles on AC regarding Lollipop, and there is a Lollipop forum where you can chat with others.
