How can I get my the old look of my tablet back to the way it looked just a few hours ago????

[AC Question]

Have only owned my Samsung Galaxy S 10.5 wifi tablet for a few months and was finally getting used to it when everything changed today with a simple click "yes" when I was asked for permission to update. I can't stand the new look. I hate all of the notifications, settings, etc...against a white background. Also hate the new task manager. Please help before I throw this thing out the window.
