Welcome to Android Central! With IMAP, everything is done through the server -- the emails don't have to be downloaded directly to the phone. So if you want to keep an email, don't delete it on your phone. If you're done with the email, delete it on your phone or from whatever webmail interface it has, and it will be deleted.

If you really want to change to POP3, then tell us which email provider you use.

IMAP should be leaving copies of the email on the server.
However, if you delete the email from the phone, IMAP will delete it from the server.

The Exchange protocol will delete the emails from the server. Check to see that you are really using IMAP.

POP3 can be configured to leave the messages on the server (by default it deletes them).
However, there is no folder syncs with POP3. There is just "download from inbox" and "send new message".

Which email app are you using?
Which email provider are you using?
Using a web browser, can to go to the email web page and see if there are any account settings that need to be adjusted?
