    I want to be able to substitute the words offered.

    I don't want the malevolent numpty in my phone to automatically change what I have keyed.

    OK, standard keyboard, how do I access its settings?

    That depends on the keyboard you're using, but "Automatically substitute" or "Automatically replace" should be in its settings somewhere, and it should be settable to on or off.

    I am using the standard Samsung keyboard.

    Under settings, there are NO keyboard options to set.
