Someone typed IMEI into my finder on my s8... this is obviously quite concerning. I can narrow it down based on when it was searched, however there does not seem to be a date and time of search, only the search term.

Was it a friend or stranger ? Did you confront them?

Welcome to Android Central! Which finder do you mean? The Google search bar? If so, are you saying you haven't searched for your IMEI anywhere else where you're logged into Google (like your PC)?

Do you typically allow other people to access your phone? Do you have a good screen lock set up, with the phone set to lock very soon after the screen turns off?
