the Droid X is almost unbrickable, as long as you can get to the bootloader screen
just use the DX (MB810) ezSBF & Root 2.3.4/4.5.621
or RSD Lite to flash a .SBF to restore (Stock Rom/Firmware)
to restore.
so should i have this on my phone before i even start with doing the rest?

I have LiquidICS 2.0 currently on my X and its very sluggish with several multi-second freezes and also tends to crashe alot. I was thinking of installing this official ROM and see how she flies.

What are the steps I would need to do to accomplish this? I can find plenty of guides to upgrade to a custom rom, but no idea how to reverse the process. Thanks in advance for any help you can provide.

1.You should create a nandroid backup in cwm before flashing rom, so if you don't like the new rom you can just restore the old one

2. liquidics 2.0 should run pretty smooth, did you verify md5 checksum before installing?
MD5: 146ebb264d20a482dac470ef8c6be19c
Verify that your download is complete with MD5/SHA-1 Hash Checksums

3. to restore stock use 621 sbf and rsd lite or ezsbf 621
see my links
Using RSD Lite to flash a .SBF to restore (Stock Rom)
on Droid X (Shadow-MB810)

or
DX (MB810) ezSBF & Root 2.3.4/4.5.621
