I've been on lollipop for weeks with no major problems. I was originally rooted, but the OTA unrooted me - so basically stock. Anyway, 3 times now, I've had to resort to fastboot to get the device to power on after manually turning the screen off (not shutting down). Seems to only happen when the battery's getting low (but not super low - ~20%).

Anybody else? Ideas?

I'd start by flashing the factory images thereby wiping everything on your device; my wife's N4 started to mis-behave after a couple of Lollipop weeks while all of my other Nexuses had been fastboot flashed to Lollipop -- all of those were working fine. Wiped/Flashed hers and now everything's just fine.
