Texas style, cook at 275⁰ and wrap in peach paper when internal hit 165⁰. Continued to 203⁰, pull and wrapped in foil and a blanket. Into the cooler for 3.5 hours.
50/50 salt and pepper with 30% of total garlic salt added. Cook time took 8 hours.![]()
