I feel the same way. The first few days with the G4 were awful. Lag everywhere. I disabled all the apps I could from the stock Apps menu, but it was still slow. I then found a Debloat tool that can disable any app on the phone through ADB. After doing that, the phone is a whole different animal. Lag has been reduced by at least 90%. I see it very rarely now, and mostly when I have taxed the phone with heavy processing. The battery life also improved greatly. I was barely making it to 1 PM, and now it at least gets me to 5 PM. It deep sleeps much better.
I have the T-Mobile version, which usually has less bloatware, but I still ended up disabling a ton of apks, both LG and T-Mobile. Here's the list of things I disabled

Now that the phone works better, I am still missing stock Android because LG really screwed up Lollipop. My main annoyances are:
- Having to swipe to get rid of the lock screen after tapping on a notification, when my Moto 360 is keeping it unlocked through Smart Lock
- I hate the LG lock screen (tied to above)
- Not being able to expand notifications (only the top, latest one is expandable)
- I miss my quick toggles and Lollipop menu
- I miss the stock Android battery status, LG doesn't show WiFi, Awake, Signal Level, etc
- I miss the Google Dialer (the built in search is pretty awesome)
- Quick Charge 2.0 is not as fast as the N6
I do love
- Back buttons. The best. Loved them on my G3, love them here.
- Camera. It really is LEAGUES better than the Nexus 6 in quality and speed. The app is pretty good too, better than FV-5 in usability and speed
- Size
- Leather back
- Notification LED
- Micro SD
- LCD Screen. I prefer cooler tones vs OLED's warmer ones.
The Moto X Pure is definitely tempting me. I really hope the camera performs as well as they say. It doesn't have OIS though, which is a shame because I find it to be a very useful camera feature. I had a Moto X for several months and really like Moto's non-intrusive additions to Android (Active Display works well, although in an LCD device, the battery might take a hit on the new Moto X, wave to wake is pretty useful too, but so is knock to wake).
