automatically lock has the option of "x minute after sleep",

sleep has "after x minute of inactivity".

what are the differences between those two?

i have two accounts on this tablet, it seems that even if i set "30 minutes after sleep", once the screen goes black, i will have to press the power button again in order to turn it on again.

Automatically lock means that after x minutes of sleep (i.e., after the screen has timed out from idling), if you wake the device, you'll have to use the PIN or pattern. If you hate having to reenter your PIN or pattern if you wake the device up immediately after it falls asleep, then increase the number of minutes.

Sleep means that the screen will turn off and the device will enter sleep mode after x minutes of inactivity.

Once the screen goes black, you're right, you have to press the power button to wake it up again.

it seems to me that once it goes to sleep, i press the button, i will have to get my face checked or enter my pattern again.

so those two things seem to be the same.

If the Automatically Lock option is set to "Immediately," then yes, as soon as the tablet goes to sleep, you'll have to unlock it again when you wake it up. If you set Automatically Lock to 10 minutes, then for 10 minutes after the screen has gone to sleep, you'll be able to wake it up and not have to unlock it. At least, that's how it's supposed to work, and that's how it works on my 2012 Nexus 7. I can't speak for a tablet that has been encrypted, though.
