Can you connect [pair] your S5 with your vehicle AND Gear S2 at the same time?

Does the Gear S2 paired to your phone (S5 in my case) no allow you to connect bluetooth to your vehicle?

Also, can I setup Samsung pay with the S2 using an S5?

I am currently using the S6 Edge but used to have the S5. My phone pairs with my car and my S2 3g just fine. When the phone rings it shows up on my car console and the S2 at the same time and I can use either the watch or the car's answer button to answer the call. I can't think of any reason why the S5 wouldn't work the same way.

Are you saying that you can just pair 2 things with the S5 or pair the S2 to the vehicle ?

Sorry I misunderstood your original question. I tried it out yesterday and was able to have my S2 3g paired with my car and with my Galaxy s6 Edge at the same time.

In order to do this I had to first have the S2 in Standalone mode so it would pair with the car. Then when I turned the bluetooth on my phone back on it connected to the phone as well. As expected, my car would not connect to my phone as it already recognized the S2 as a "phone" that it was connected to and my car will not connect to two phones at the same time.
