That looks delicious, very tempting. Sadly anything with meat is a "no go" since I stopped eating meat in January. I have learned to get very creative with other ingredients.

My grandmother is a life long vegetarian/ vegan on occasion. Its because she's seventh day Adventist, but growing up I learned quite a few good vegetarian and vegan recipes. Like parmesean eggplant, vegetarian lasagna (spinach instead of beef), vegan cheese, how to make carob cookies...

I made the mistake of watching "Vegucated" on Netflix. Very eye opening! It's not for everyone, but it did give me "food for thought" :D. I do not know how long I can keep it up, but so far so good.

They are hollowed out, typically grilled or baked, and then treated like a stuffed pepper. There is a 'classic' method to doing it, but one thing I learned in college, 'classic' just means it takes a lot longer. Almost everything I learned to make I either figured out an easier way, or was taught an easier way.

Here is an idea; take the zuchs, grill them, and add diced tomato, basil, tossed in a vinaigrette, and add some slivered Parmesan cheese. Salt and pepper, of course...lol
 
Diced italian tomatoes, onion, summer squash, zucchini, minced garlic clove, salt, pepper, topped with sharp cheddar and baked :-)

It isz and its so easy, lol. I brush them with olive oil, but you could use butter or your choice of oils/margarines to cook it with.

You can blend olive oil and butter to get the best of both worlds. Olive oils smoke point and butters taste.
