How about zuchhini boats?

"ZUCCHINI PIZZA BOATS RECIPE

Ingredients
3 medium zucchini?s cut in half lengthwise
1/2 kg lean beef mince
1 green capsicum
1/2 cup sundried tomatoes, chopped
1/4 cup black olives sliced
1/2 can fire roasted tomatoes
3 tbsp. light feta cheese
1 tbsp. balsamic glaze
1/2 tbsp. light parmesan cheese

Method
1. Pre-heat oven to 280deg, line a baking tray with foil
2. Heat a large non-stick pan over medium heat, add beef and cook until brown, stirring often.
3. When almost cooked through, add capsicum, sun-dried tomatoes, canned tomatoes and olives
4. Scoop most of the flesh out of the zucchini onto foil. Scoop the beef mixture into hollowed-out zucchini, topping each with balsamic glaze and alittle of both cheeses.
5. Bake 15min. Remove from oven and serve with a side of mixed greens.

Now you guys have made me starving and I was just getting ready for bed. Everyones food looks more delicious than my "uni life" dinner of noodles and a microwaved meat ball sauce :\ As for the bugs on the fry pan is very common in parts of the world. I remember in Thailand as a child before it came a tourist destination (and between being walked alway with from locals for being 'rare' with blue eyes and blonde hair) I remember them cooking crickets in wokks in the streets. Personally I wouldn't of eaten any, but just a quick 2 cents from me.

Sounds like a good variant of boats. Have you tried it?

Summer time is Smoothie time! Here is one of many Smoothie recipes I have :
1cup ice
1/2 cup of your favorite juice (I used apple jc.)
Mango
Banana
Agave (sweetener)
Vanilla extract
Combine all ingredients in blender, enjoy!

Sorry for the late reply, the forums haven't been showing me any notifications of quotes, likes or anything in this section of the forums.
I wish I have tried it, might get the ingredients soon so I can try it out. An interesting one popped into my news feed which is just chocolate coated kiwi fruit slices on a popsicle.

Interesting. Since it is summer, one thing you could do is grilled strawberries. Soak kebab skewers in water for 30 minutes, spear berries and grill. 2 min is all it takes, probably less. Throw them in a shortcake.

That sounds delicious. I love Kiwi fruit, It is considered a "power" fruit packed with vitamins + antioxidants.

I have tried grilled bananas, pineapple, and mango. I will have to try the strawberries. :D

Yes Sir.....Chef/Owner of a small restaurant, for better or worse :)

Very cool. I was in the food industry for 20 yrs. I would always take note of the way the Chef/cooks prepared food, then I would duplicate it at home. Learned a lot from just watching. I love to cook and enjoy it very much. What state are you in? What type of food?

**Edit: I miss cooking. I have 2 teenage daughters and it is very difficult to please both of them. Typically have to prepare very simple meals as they are very finicky. I have stopped cooking since they do not care for most of the "Gourmet" ingredients found in the meals I prepare, so the wife and I typically go out for dinner :p

I'm in beautiful southern Oregon and we call ourselves "international fine dining". The "international" refers to favors (giving me carte blanche to cook whatever I please) only as I try to use predominantly local ingredients.

It's the irony of the culinary life... I rarely go out and eat the simplest possible meals at home :-) but I'm sure if I left the field, I too would miss it.

Awesome! I Cheffed in Eugene for a few years before I bought this place....miss living in a college town. I'll see what I can do about getting a few pics posted :)
