I haven't tried thunderstick, or really any non-bamf roms, lately.
I've been running sense 3.0 rc4 since it came out a week or two ago, and it's been good to me, and i really like the animations and extra features, however it is not the quickest. I keep my min and max clock speeds at 368 (to reduce wake up lag mainly) and 1.2 (to make the rom itself perform a little more snappy).
Bamf 2.1 seems a little quicker, and there's a little less going on while still having the good feature set (some sense 3.0 stuff, db toolkit which is rad, more mods available).
As far as customization and rom performance speed, i think you should check out CM7 - the premiere aosp rom which offers nearly endless customization, uses adw as the launcher which is also highly customizable, and is a lean, fast running rom. The latest release is far more stable than the previous. There's a link thread from ssethv in the roots section, and you can read about how much everyone likes the rom over there (I haven't used it on thunderbolt but my retired droid incredible still runs cyanogen).
Other aosp roms will probably offer you similar benefits - no sense, so things usually run faster. And lots of options. OMFGB is another one, , and fatboy97 just posted a link to Liquid thunderbread - liquid team has a long history of rom development, so it's fair to expect some cool stuff from them for tbolt.
