If you are referring to outlook not native email app because you have installed it as part of office365 from your company etc often it has additional security settings and polices
If this is the case you will need to remove (un toggle) settings/lock screen and security/other security setting/device administrators then you should be able to remove it
It is also similar for native email to disable
These phones come with some MS apps pre-installed, including Outlook (besides the native e-mail app). Some have the OneDrive app, which also gives you nearly 250GB free for a couple years, IIRC.
For what it's worth, my phone is an AT&T S6 64gb ... and it did NOT come with Outlook pre-installed. The only MS app I know of that came on the phone is OneNote, which I disabled right away because I simply don't use it or need it.
You mind me asking what carrier you have, or if you purchased the phone outside of a carrier, where you got it?
