I know the phone comes with the Swype keyboard and Samsung's customized keyboard (with the microphone in place of the comma).

Is it possible to install the most recent default Android keyboard? Does that simply require side-loading the APK? Does one need to be rooted in order to do that, and can you uninstall a keyboard once it's installed?

Thanks!

You can find the Gingerbread keyboard in the market no root required.
And yes u can easily uninstall the keyboard in the link. Root may be required to uninstall Swype &/or Samsung's offering

Great to hear, thanks.

But... it looks like the linked-to keyboard is the Gingerbread keyboard, but repackaged (i.e. not directly from Google). Is there an official/ Google-sanctioned way of adding it?
