How are yall able to take pictures of your phones home screen?

Hold down these two buttons at the same time: home+power for a couple secords and it'll screen shot it that way. Or you can use the s pen to capture it or crop a portion of it to share

Mind sharing how you were able to add the batman logo? I went into the always on display settings an when I select image there are a few stock ones you can choose from but I didn't see a way to choose a custom one.

Use the very last AOD option for Clocks. You can use your own image on that one.
