It depends on the situation... Sounds like you'd be best off using auto hdr

I don't adjust anything... it's auto everything lol

Same here. I usually tinker to the extreme but I've been pretty happy with the 10's auto adjustments so I've been just tapping to focus and an occasional swipe to bump the exposure.
I leave HDR on auto. It does a really good job of deciding on it's own.
