Questions for new Tab S2

I bought a used galaxy tab s2 yesterday and updayed tge OS to Nougat 7.0. One thing I notice is that touchwiz is not the launcher (whatever it does) and when trying to do things like access Application Manager, my settings are not the same as the instructions I see online. How do I get touchwiz to work?

What is it about this tablet that it's incompatible with Apple Music?

Why do apps snd settings look for pix in the Gallery and not (google) photos app?
