Recover lost photos after factory reset (HTC One m7 / Lollipop 5.0.2)

My carrier (ATT) forced a system update from KitKat to Lollipop. The phone had 3% battery power and crashed during the system update. I was forced to do a system restore and lost all internal storage in the process.

Need to recover thousands of pictures/videos.

I've tried dozens of recovery options, but they all seem to lead me to the same problem. They won't work using the MTP mode that is forced in Lollipop, and Windows will only see my phone as a media device rather than a Mass Storage option.

I need a way to use Mass Storage and suppress MTP. Or a recovery option designed to support 5.0.2 or MTP.

I've tried the following:

Rooted w/ SuperSU but still in S-ON (HTC Security setting)
Enabled Developer Mode and turned on debugging
Drivers of various shapes
USB Mass Storage app that boots on launch
Wireless FTP server on phone, with mapped network drive on PC
Several styles of recovery applications, (android and phone specific and generic file unerasers)
