I want to listen to youtube videos while searching the web or playing solitaire. Each time I load up a video, it stops playing when I go to the other application. Is this type of multitasking not possible in Honeycomb? Thanks.

It's not a limitation of the Xoom. The YouTube app itself just forces the video to pause when the app loses focus. I don't know of a workaround for YouTube, but you could always use Pandora.

That's interesting but it's not just the youtube site. I notice this with most applications such as slingplayer, an online guitar site, web browser, etc. Each time I try to listen to some audio or video application and change apps, the audio stops. Perhaps I am missing something. It would seem the Xoom should be able to do this.

The reason these apps don't do it is because most people would not want them to keep playing media when they are unfocused. What you want, while perfectly legitimate, is the opposite of what people would expect/want. Pandora, on the other hand, does run the background.
