This is might be obvious, but thought I'd post for reference.
The s2 email app only works with the generic samsung email phone app. New emails that reach your watch will be accessible via the watch application, so you can maintain an (new) email history on the S2. If you have the hand-off function enabled, emails received while using your phone won't appear in the s2 email list.
Other email apps will provide standard notifications to which you can reply, etc. But once the notification is dismissed, they are gone.
Kinda lame since the stock email client is pretty junky. Hopefully, in the future, Samsung will allow other clients to run on the app, or allow developers to install their own management app.
