Solved!! I got LDAC working just fine. I think the key was installing Sony Music Center. Under 'Bluetooth Output Settings' I checked 'Prioritize LDAC' and 'Prioritize Audio Quality.' It didn't seem to kick in until I cycled the power on the headphones.
Can anybody help me figure out how to make sure the phone defaults to the LDAC codec when I'm using my Sony WH-1000xm3's? It worked fine on my Pixel but I just can't figure it out on my new Samsung.
It looks like you should be able to change the codec via Developer Options but no matter what I do it always defaults back. I was at least able to convince the phone to use AptX instead of SBC via the Sony Music Center app, but I've always assumed Android was supposed to automatically pick the best codec and quality.
