I'm really leaning towards the HTC 10 over the S7 but the screen brightness concerns me. I went and checked one out in person, and it just seemed much dimmer than my Moto X pure on max brightness. For all everyday users, has the brightness been an issue, especially using outside,?

I don't use the autobrightness setting, I don't think it works to well. But other than that the brightness hasn't been an issue for me. I work outside a good bit and I have to turn it to max brightness but when I do I don't have a problem seeing it. Even with sunglasses.

But thats me..

I agree with VagrantSaint. It doesn't get bright enough with auto turned on. With full brightness I've been happy. I've been happy with the screen generally. The initial tint seems to have faded. There is that issue with the polarization in portrait mode, of course, but it's easy enough to deal with that.

Lean Harder towards the 10. You won't regret. And if you really want to use auto brightness, get the lux lite auto brightness app. I don't use it now but I've used it in the past and it's way better than anything else.

I had the M7 which was great in bright sunlight. The M10 is not as good. I turned off auto and put it on full when I go into the sun. I wouldnt say its all right but I would say its passable.
