Setting or resetting camera default

Is there a way to set the camera button/icon in the Favorites bar to a different camera app, say Camera Zoom FX?

That Camera shortcut is just that--a shortcut. You should be able to long-press it, then drag it to the Remove area, and then replace it with the Camera Zoom FX shortcut by going to the App Drawer, long-pressing Camera Zoom FX, and dragging it to the Favorites Tray.
