Unable to update after sideloading P on my PIxel 2 XL

I side-loaded Android P earlier this year, using adb, but now can't update to later versions because the OS doesn't see updates when I check for them.

What can I do to fix this? It's very frustrating, because many of the current apps are not compatible with my old version of Android P anymore and I'm getting error messages every time I launch an app.

You should roll back to Oreo then enroll in the beta - https://developer.android.com/preview/devices/

Or unenroll in the beta, because P is out for people to find bugs in, it's not meant as the version you run in your daily driver. That's what beta test means - "We think we got all the bugs out, but if we missed any, let us know". Evidently you found one.

And remember, beta versions don't get monthly security updates.

Just side load the June P update... Worry about OTAs when it gets released, then load the full image in fastboot... If you don't have a Big Red Devil model with a locked bootloader.
