ZW2 Call Audio won't switch to Car and now is gone

:-) Well, that _is_ the "remain sane" option... keeping the watch phone audio off.

Having said that, I think we are getting close to figuring out ways to sanely use the watch for phone audio when better options (car audio, headset, etc.) are not available

But I wouldn't be surprised if there are phones that just work.

The Tasker Bluetooth "Swiss Army Knife" plug-in seems to be designed around setting priorities for multiple Bluetooth devices... but if you read their instructions it sounds as if your phone brand has an effect on how successful you will be... because some don't pick up that a new device has become available. Anyway, good luck. And please report back any interesting findings as it may help other folks.

Update: after several weeks of using the "docking cable" solution (as described above) to "tell" my phone to connect Bluetooth to this car radio instead of watch, I am pleased to report that it is working seamlessly for me. Also handy to have tasker launch my Sat Nav apps at the same time.
