I just detected a folder named 'self' while looking through the storage of my Phone (Motorola Moto G5, Android 7.0) and I'm wondering because I never noticed it before, I cannot delete it neither can I see what's INSIDE the folder, the Explorer says there's no file inside, the size is 0Bytes, it's readable and writeable.
The path is /storage/self/

Does someone know more about it?

The Pixel has it too, so it evidently comes with Android. But it's 751 - that means the owner has read, write and execute permission, the group has read and execute permission and others (which includes you) have only execute permission.

It has one folder in it, primary, which looks like the internal SD card. (My phone's rooted - yours probably isn't, since you can't see primary.)
