Reverting back to Stock ROM before sending into HTC Trade-Up Program

I just bought the HTC One phone and plan to trade in my HTC EVO 4G LTE with the HTC One Trade-Up program. Just to be on the safe side and not have any problems with the trade-in, I wanted to install the Stock ROM on my EVO LTE and lock the bootloader. I've been running the Meanbean ROM on my EVO LTE (rooted and S-ON), and I had a heck of a time finding and installing the Stock ROM. The Meanbean ROM is Jellybean version 3.16.651.3 710RD with the 2.09 HBoot (unlocked bootloader), and I tried everything I could find on the web to get the stock ROM installed on it. Finally, I figured it out and was successful.

Although my phone was rooted, it was still "S-ON" which means for security reasons you can't install an older ROM version than what you already have installed. So I couldn't install any of the stock ROMs I found on the web that were earlier versions than the 3.16.651.3. Also, I couldn't find a full stock 3.16.651.3 ROM because that version was an OTA upgrade on the previous version. The solution, was to alter my phone to be "S-OFF" which would allow me to install older versions of the Jellybean ROM.

So, here's what I did:

1) Go to http://http://unlimited.io/jewel.htm and follow the instructions on this page from step 1 to 10. This will get you to "S-OFF" condition and will install the stock 3.15.651.16 710RD ROM.
2) That's it!

You don't need to do any of the steps after step 10, since you want to keep your phone's bootloader "locked". When you're done, the bootloader screen won't show the text "TAMPERED" and you'll see "relocked".

Note, that you have to do all of this using a version of Ubuntu Linux OS (can't be done under Windows or Mac OSX), so you do have to go through the process of setting up a Live CD with Ubuntu or USB Stick to boot up into to run this procedure. If you need any help or suggestions with this, just let me know and I'll try to help.

Now that I've done this, I feel better about sending my HTC EVO LTE in for the $100 trade up program.

To get S-OFF, do I need to be on a stock ROM? I might be confusing myself, but it looks like to RUU, you need to be on a stock ROM, but I can't get back to stock without an RUU (I'm currently running CM11). Can S-OFF be achieved with CM currently installed? I have never had to do anything with hboot before, so I apologize if this is a stupid question.
