Well don't quote me on this, but I know that a wireless connection needs to stay persistent connection, meaning that the wireless radio has to respond to your AP every few minutes to let it know it's still connected. But the 3G radio only has to send those packets when you start requesting a page etc, and this is mainly so Verizon can see who is doing what and how much of it. This keep congestion down on the cell towers.
So in theory the 3G will use less resources than your WiFi, however WiFi will be a lot faster. So give up speed for life, or give up life for performance. On the phones I've had with WiFi I just leave it off until I decide to surf the internet.
